Harvest Time

E – Early Harvest of Olive Oil

Why less yield often means more quality

Why early-harvested olive oil tastes more intense

During tastings, we often hear surprised comments:

👉 “Why does this olive oil taste so green?”
👉 “It’s much more intense than others – why is that?”

The answer is almost always the same:
👉 early harvest.

Because the harvest time significantly determines
how an olive oil will taste later.

What “early harvest” really means for olives

Early harvest refers to olives being picked
while they are still green to slightly purple – i.e., before they are fully ripe.

At this stage, the olives contain:

  • a particularly high amount of polyphenols
  • intense aromas
  • natural antioxidant plant compounds

👉 You can find out more about this in our article on polyphenols in olive oil.

These olives yield less oil,
but significantly more:

✔ Flavor
✔ Freshness
✔ Stability

This is how we do it at ILIOS – Green Gold 🌿

At ILIOS – Green Gold, we deliberately choose early harvest.

Even if that means:

👉 less yield – but more quality.

Our olives are:

  • harvested early
  • processed on the same day
  • gently cold extracted (not pressed)

This preserves exactly what early harvest stands for:

👉 Intensity
👉 Freshness
👉 Expression

For us, it's not about quantity –
but about what ends up on your plate.

Why early harvest is important to you

Early-harvested olive oil offers you:

✔ more intense aroma
✔ higher polyphenol concentration
✔ more bitterness & subtle pungency (a sign of quality!)
✔ better oxidative stability
✔ longer shelf life

👉 You can read more about its effect on taste in the article on
aromas in olive oil.

Knowledge for connoisseurs, with a wink 😄

Early-harvested olives are a bit like teenagers:

👉 not yet "finished" – but full of energy 😉

And it's precisely this energy that you taste in the olive oil.

Early harvest vs. late harvest

Early Harvest

  • green color
  • fresh, herbaceous aromas
  • bitter & pungent
  • high polyphenol content
  • lower oil yield

Late Harvest

  • mild & smooth
  • less bitterness & pungency
  • lower polyphenol content
  • higher yield
  • often neutral flavor

👉 Both have their merits –
at ILIOS, we love character.

How to recognize early-harvested olive oil

Look for the following clues:

  • intense green color (an indication, but not proof)
  • fresh, green scent
  • noticeable bitterness & pungency
  • terms like “early harvest”
  • transparent origin

👉 If all of this is missing, it was usually harvested later.

Tip from the ILIOS kitchen ☀️

Early-harvested olive oil is best enjoyed:

  • on fresh salads
  • over tomatoes
  • with steamed vegetables
  • or simply with bread

👉 Less is more – the flavor takes care of the rest.
